The original image floods the retina with ultra violet and infra red.  When the new image is revealed the brain uses this information to make sense of the photo by using the residual colour sensitivity to make the sky blue and the castle a beige colour.  Moving the eyes forces the brain to reevaluate the image and quickly registers the photo as black and white.  Simple principle but very cleverly done.
