Dear sir or Madam,
I am a lover of chocolate and wonder why as a chocolatier you don't insist on a minimum 30% cocoa solids in your Milk Chocolate products. In my experience and opinion this level of cocoa solids is essential in a really good bar of chocolate.
Would be interested in your comments.

Why change something so many people like as it is? Regardless of the debate over what constitutes 'real' chocolate, millions of people like CDM and Galaxy as they are. (I would certainly push for a change to some Nestle recipes though!) If you want more cocoa solids, Lindt or Green and Black's both do 70%+ bars and it's not as if you have to get it from specialist shops. If you order a cheese sandwich, don't send it back because there's no ham in it.
A totally invalid analogy. I hear the rest of what you say and there's some merit in the sentence in red. However, I for one want better. Because it tastes 'OK' is not a reason not to improve it.

It's not invalid at all and you know you're only saying that in an attempt to get a rise out of me. Bad luck, I know you too well now It's a perfectly valid comparison - you are perfectly capable of reading a label so you know what goes into CDM, Nestle, Galaxy (and what doesn't). If you don't like it stick to Chocolate Utopia as you so often tell us you're going to.
Here's another way to look at it. When was the last time you bought something that said 'new improved recipe' on it that actually tasted better than it did before?
