Title: Can Chocolate & Bailey’s Truffles be beat
Post by: Heavenly Truffles on January 02, 2006, 11:08:37 pm

I am looking for new flavours to make.
My biggest seller is Choc & Baileys
so my challenge to you is to suggest
a combination that will prove even more popular!
Best suggestion gets a 500gm tub of that flavour suggested

I suppose it's not that strange really.

I keep thinking I may try a chilli one.

Have you ever tried chilli choc?

No not ice cream.
Truffle.
I make it in swirls or for people that really love it, they can buy 250gm and 500gm tubs to chop up and share!

Obviously blatant advertising but I really am looking for help and suggestions for flavours etc.

Also, as mentioned on the other thread, I'd like to set up a Choc & Truffle club.

My choc and mint is ace - extra minty!!!!

I tried Bananas but the chemistry doesn't work.
The enzymes in the banana break down and cause the truffle to go semi liquid, which was a pity cuz it tasted absolutely gorgeous!

No the last marzipan bar I had was the Thorntons one.

Ah see there's the problem. I don't like white choc, not even on marzipan.

Not yet. Still waiting for my Bain-Marie to arrive.

Just bought a pack of Marzipan to have a mess with though.

Problem is, I absolutely hate the stuff, so I can't test to see if it is nice or not!?!?!

What is Bain-Marie when it's at home?
Title: Can Chocolate & Bailey’s Truffles be beat
Post by: loulou on January 06, 2006, 02:19:27 pm
Bain-Marie (Mary's bath) refers to the method of placing a pan of food in another pan with water in it to stabilize the heat reaching the food (water bath). The term was originally used in alchemy, and was named after Moses's sister, who was an alchemist.

I have these giant bars of Belgian Chocolate (2.5KG) which I will melt in the Bain-Marie.
Then I can dip the truffles into there to coat them in chocolate!
It's coming from Germany - should have cost £180 but I got it for £75
What a bargain!
