Not sure if strictly this one is a carol, but I always like 'In the Bleak Mid Winter'. Very quaint.
Like 'Deck the Halls' as well.... Fa la la la la etc.

When I was younger I sang in a choir, and the first verse of Once in Royal David's City was sang as an unaccompanied solo. Unfortunately the last thing we had practised was Hark the Herald Angels Sing and I sang the solo to the wrong tune - the words fit for the first four lines.....
