Title: Carrot cake

Anyone else a fan of carrot cake? I bought some for first time in ages
over the weekend and it's gorgeous. It was Morrisons brand too so I was
surprised. I always used to be put off by the name, you can't imagine
that a "cake with carrot in" would taste nice.

carrot cake is gorgeous. I made one a while ago and I have to say it was the nicest I've tasted. Agree with the carrot bit though, it sounds a bit mad. I can just imagine Peter Kay givng off about it

Me too, carrot cake is really nice. I have had Morrisons own brand
cakes before. I had coffee cake and chocolate cake. Both really nice
with a good layer of icing on top

Never liked it really. Why can't you get banana cake any more? My nan used to make it but she is too arthritic now.

My mum makes banana and walnut cake, the walnuts spoil it in my
opinion. When I make a banana cake in the future it will be minus the
nuts!!

I've been known to make banana cake, no nuts of course. Could never make it as good as we used to get on holiday

That's the one if it's the ones in trays for 99p. I dont like the chocolate fudge one though.



I tried one today of their "the best" range, with orange icing, which is nice but not moist enough.

I think we are talking about the same cakes and they are really nice
for their price. Will be good for the Christmas period.

Green Tomato Cake

A green tomato cake recipe.

INGREDIENTS:



  • 2 1/4 cups sugar
  • 1 cup melted shortening
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup pecans or walnuts
  • 1 cup raisins
  • 2 1/2 cups diced green tomatoes
  • coconut (optional)

PREPARATION:

Preheat oven to 350°. In mixing bowl, beat sugar, shortening, eggs and vanilla until smooth and creamy. Sift together the flour, salt, baking soda, cinnamon and nutmeg; slowly beat into egg mixture. Blend well. Stir in pecans, raisins and tomatoes.
Pour into greased 9x13-inch pan. Top with coconut if desired. Bake for one hour, or until a wooden pick or cake tester inserted in center comes out clean. .
Serves 12.

Why is it called carrot cake. Their isn't any carrots in it just cake.
