Today I have ate half a sugar pig and all I can think of is coconut ice. I must find some.

Oh yes! Sometimes coconut ice really hits the spot!
I know how to make it. Mix equal amounts of dessicated coconut and icing sugar together. Bind carefully with CONDENSED milk (that thick sugary stuff) until you get a firm dough. Roll it out to your required size and shape and chill until set.
You can add colouring if you wish. You can even add peppermint essence to one half for a contrast in taste.

Thanks oldspice. I'll probably make a mess of it so I'll give these instructions to my mam. She's better at that sort of thing. I might get her to make some coconut pyramids while she's at it.

Go on Loulou, have a go, it's easy. It's something me and my best friend used to make when we were about ten so it really can't have been difficult!

My mam is making it for me for the weekend and also the coconut pyramids with glace cherries on top. Seeing as she is in a helpful mood this week I have sorted out all my clothes that need buttons stitching back on. Should keep her busy til Tuesday.

I had some coconut ice a few weeks ago from a fare, it was very over prized. I had one piece and it was 69p
From the same stoll I brought some proper toffee. It was banana flavour and gorgeous!

Lou, has your mum made your coconut ice yet? You can make peppermint creams using icing sugar, condensed milk and peppermint essence. It was the only useful thing I learnt in cookery lessons!
They are especiall nice if dipped in good chocolate.
I can also make real chocolate truffles using unsalted butter, double cream, maraschino cherries and good, dark chocolate.
